In my family, rice salad is related with summer, weekends and relaxed food at home. My children love the mixture of flavors, but above of all the informality of the recipe.
In Italy you can find a great variety of conserves, ready-made for this delicious salad, but I prefer to prepare it with natural products. The truth is that it is a very special dish, since you can prepare as many versions depending on what you have in your fridge and on family taste. What is certain is that it is a recipe that will hardly deceive you.
You can change the recipe just by adding mayonnaise, balsamic vinegar, olive oil or as many dressings as you can imagine.
Involve your family in the preparation of this recipe, especially the little ones, and enjoy together the fun of the kitchen.
Ingredients
- 300 gr of rice
- 100 gr cooked turkey ham or turkey sausage
- 100 gr of mozzarella cheese
- 1 cucumber
- 300 gr tomatoes
- 100 gr conserved tuna
- 50 gr green olives
- 50 gr black olives + some more to decorate
- 50 gr caper
- ½ lemon
- 2 medium carrots
- 1 boiled egg
- ¼ cup extra virgin olive oil
- A branch of spring onion + little bit more to decorate
- 50 gr conserved small onions
- Salt and pepper at will
- Pickles (optional)
- 2 palm hearts (optional)
- 2 artichokes (optional)
- Mayonnaise (optional)
Directions
- Wash the rice well until the water comes out completely clean and cook it al-dente in your favorite style. Let cool.
Peel and remove the seeds to the cucumber and cut it into small squares.
Cut all other vegetables into small cubes. Cut the ham, egg and cheese into small cubes.
Mix the rice with the fresh and conserved vegetables, ham, egg, cheese, tuna and add salt and pepper at will.
Add the olive oil and the half lemon juice, mix well and check the salt.
Put minimum for one hour in the refrigerator.
Decorate with black olives and green onion leaves. Serve cold
