Cut all the ingredients into big dices.
Bring all of them to a stock pot, cover it with room temperature water and bring it to a boil.
Prepare your Bouquet Garni with parsley, thyme, bay leaf and rosemary and add it to the pot.
We will let this stock cooks for at least one hour, constantly removing the foam that will form on its surface.
After one hour, we will pass our stock through the sieve to remove the vegetables.
Your stock at this point is ready to be used in your favorite dish.
This stock can be used immediately or you can conserved in your fridge for 3 days or in your freezer up to 3 month.
