The Kimbo is, without any doubt, one of my favorite Dominican bread. You can improve the recipe by changing the cheese and ham or adding herbs, onions, garlic, leeks, and as many ingredients as possible.
It is a bread with high caloric content, so it is preferable to eat it at breakfast, accompanied by a simple glass of milk.
Ingredients
100 gr brown sugar
500 gr warm water
20 gr bread yeast
1 kg all purpose flour
20 gr salt
2 eggs
28 gr margarine
- 1 cup of evaporated milk
1 cup cheddar cheese - Cut into 1x1 cm cubes
1 cup cooked pork ham - cut into 1x1 cm cubes
28 gr butter at room temperature
2 eggs - Beaten

For the dough
Add a spoonful of brown sugar to the warm water. Mix well and add the bread yeast immediately. Mix well and let rest for 10 minutes.
Distribute the flour on a clean surface in a volcano shape and sprinkle the rest of the sugar and salt to the outer part of the volcano. Mix eggs, margarine, and yeast mixture in another bowl and inside and pour it out to the center of the flour. Mix carefully, from the inside out, trying to reduce the contact of yeast and salt as much as possible. Knead until you get an elastic dough that does not stick to your fingers. Let rest, covered with a damp cloth, for approximately 40 minutes.

In a bowl, mix well all the ingredients and set them aside for the next step.
Make your bread
Stretch the dough and cut it into squares of approximately 2×2 inches. Place it in a large bowl and add to it the mixture of eggs, milk, ham, and cheese. Mix with a spatula or using your hands, trying to keep the squares separate. Place this mixture in the mold of your preference, previously greased, and let it rest for 20 minutes.
Bake it at 165 degrees Celsius for 30 minutes.

You can change the ham for leek, and you will get an interesting twist with an entirely different bread, but undoubtedly delicious
