Ingredients
1-2/3 cups all-purpose flour
2.5 cups cornstarch
2 teaspoons baking powder
200 g butter
3/4 cup sugar
3 egg yolks
1 Teaspoon vanilla extract
1 cup dulce de leche
Enough grated dried coconut to decorate
Directions
- Preheat the oven to 175 º C.
In a bowl, mix and sieve flour, cornstarch, and baking powder.
With an electric mixer, beat at medium speed butter, sugar, and egg yolks until they get creamy consistency. Add the vanilla. Gradually add the flour and cornstarch sieved.
Place the dough on a clean surface and finish the kneading with your hands until it becomes smooth and easy to handle. Divide it into 4 equal parts.
Sprinkle some flour on a rolling pin and on a clean surface. Spread the dough with a rolling pin and, with a circular cookie cutter, cut as many cookies as possible at a height of about half a centimeter in size.
Place the cookies in your baking tray and bring them to the oven for about 8 minutes. After this time, remove the cookies from the heat and take them delicately with a spatula from the tray. Let them cool.
To prepare your alfajores
- Place a teaspoon of dulce de leche in the center of the inside of a cookie and sprinkle delicately. Place the second cookie and add a bit of dulce de leche at the edges.
As a final touch cover the cookies' borders with dried coconut for the final touch.
